Beetroot Salad

Ingredients for 2 servings

80 g tinned beetroot
1/4 cauliflower
1 boiled egg
1 tablespoon mayonnaise
Salt and pepper

Preparation

1. Break up the cauliflower into florets and blanch.
   Shell the boiled egg and cut into chunks.

2. Thoroughly drain the beetroot.  Mix salt and pepper
   into the mayonnaise, then add the beetroot,
   cauliflower and  boiled egg then mix.
