Mixed Fried Rice
Ingredients for 2 servings
2 bowls cooked sprouted brown rice
10 g dried shrimp
1/2 leek
2 shitake mushrooms
20 g peas
1 egg
1/2 teaspoon salt
Pepper
Sauce
1 tablespoon shrimp soaking water
1 teaspoon sake
1 teaspoon sugar
2 teaspoons soy sauce
1 tablespoon salad oil
Preparation
1. Soften the dried shrimps by soaking them in tepid water. Set aside 1 tablespoon of soaking water. Julienne the leek and remove the mushroom stems and dice the mushrooms to 5 mm.
2. Put the mushrooms and sauce in a frying pan and cook on low heat until almost fully reduced then put aside onto a dish.
3. Quickly rinse the frying pan, put it back onto the heat and heat up the salad oil. Whisk the egg to make scrambled egg then set aside.
4. Using the same frying pan, heat the oil and fry the leek and shrimps then add the sprouted brown rice, mushrooms,scrambled egg and peas then season with salt and pepper.
