Rice Pudding
Ingredients for 2 servings
1/2 bowl cooked sprouted brown rice
1 cup milk
2 tablespoons sugar
2 or 3 drops vanilla essence
Caramel
1 tablespoon sugar
1 1/2 teaspoons water
Preparation
1. Put the sprouted brown rice, milk and sugar into a saucepan.
2. Cook on low heat for about 15 minutes, stirring the saucepan
bottom from time to time. Add vanilla essence, mix well then
turn off the heat.
3. Transfer the pudding to a shallow tray, allow to cool then put into the fridge to chill for about 1 hour.
4. To make the caramel, put the sugar and 1/2 teaspoon of water into a small saucepan and heat on medium heat. When the mixture boils and turns golden, remove from the heat. Add 1 teaspoon of water and shake the saucepan to give the caramel a consistent thickness.
5. Serve the rice pudding chilled and top with caramel sauce.
